Defining Nutritional Security

Introduction: In this component, learners explore the topic of food and nutritional security from several different perspectives.

Course Components:  
  • Food Dignity® Podcast featuring an anti-hunger hero who looks at the nuances behind food and nutrient insecurity
  • Video of Clancy differentiating the terms "nutritional security" and "food security"
  • Group or individual activity defining these terms
  • Group or individual activity outlining problems that intersect with food and nutritional insecurity

During the course, you will: 
  • Write a personal definition for food security and nutritional security.
  • List the four levels that the US Department of Agriculture uses to define food security and describe.
  • Talk about the connection between nutritional security and public health.
  • Complete a problem tree and describe the relationship between the identified root causes, the problem, and the resulting effects.

After the course, you will be able to:
  • Define food security.
  • Define nutritional security.
  • Discuss the differences and similarities between nutritional and food security.

Big Barriers to Nutritional Security

Total time for the section "Big Barriers to Nutritional Security": 1 hour 45 minutes

Introduction: In this component, you will explore examples of barriers that people face in accessing food. The purpose of this is to understand the perspectives of the food insecure, the complexities and nuance that comes with poverty, and dynamics that might prevent them from being able to achieve nutritional security.

  • Diagrams that support the podcast's message 
  • 2 group or individual activities to bring this lesson home

During this course, you will: 
  • List and compare what food donations look like for individuals with kitchens versus homeless people without a full kitchen.
  • Discuss the importance of transportation and its impact on how a person can feed themself.
  • Draft an extensive list in barriers that exist for a person in achieving nutritional security.
  • Compare and contrast the definitions “food desert” and “food apartheid”.

After this course, you will: 
  • Understand barriers that prevent individuals from achieving nutritional security.
  • Relate the social determinants of health framework to your own community or work situation.
